The chef


Vincent Colbeau Justin is leading  the cuisine at La Pinède’s restaurant from 2015, where the atmosphere is one of chic sophistication, overlooking the Mediterranean.

Originally from Tours, this young chef learned his trade in renowned establishments such as Guanahani on the island of St Barthélémy and the Lana in Courchevel.

A big fan of the region, he knows our establishment well having been sous-chef at our La Palmeraie restaurant in the Château de Valmer from 2007 to 2009.

His concept of fine dining is very much in keeping with the spirit of the location and his menus fully respect the turning of the seasons.

Facing the Îles d'Or, he puts the spotlight on local Mediterranean produce, and organic fruit and vegetables from the estate’s garden.

Chic and simple his cuisine mirrors to perfection La Pinède’s enchanting setting, lulled by the gentle sound of waves lapping the shore and the soft light of a beautiful sunset.
